We source directly from a small, organic farm in Andalucia, southern Spain. Our supplier offers four varieties—three single-origin olives and one blend of all three olives. We chose to start with the blend of the three olives (Picual, Hojiblana & Arbequina). It’s smooth, fruity, and finishes with a subtle peppery kick from its naturally high polyphenol content, ideal for finishing, dipping, or dressing.
